Organic since 1989 and committed to preserving the biodiversity of indigenous Sicilian ancient grains. Locally farmed whole ancient grains, which include the wheat germ, are freshly milled for each batch and made into pasta within hours to limit oxidisation, using the pure water from Mount Etna. All stages of milling and pasta production are low temperature to maintain the precious nutrients of the grain. Low gluten index means weaker gluten bonds, whilst wholegrain maximise fibre content, which supports digestive health. The milling and pasta production are powered by clean energy from renewable sources.
